The lavender keeps the opening from going straight to dessert, and the ginger puts a dry edge against the cocoa so it never turns into a chocolate bar. After about an hour what is left is vanilla absolute, rich and slightly powdery. It wears warm and sweet rather than delicate. Cold weather, evenings, and anyone who already reaches for vanilla.
